Est. 1997 · The cocktail bar, Level 1
CALI The Lounge
The cocktail bar at Ascott Raffles Place — low light, long pours and city views, where the CBD slows down over a good drink and something to share.
The one downstairs,
where the city unwinds.
The Lounge is CALI after dark — the circular bar at Ascott Raffles Place, low light and city views, signature cocktails and an honest wine list, with bar bites built for the middle of the table. No pork, no lard, ever.
People
Plates made to pass around a table — generous, familiar, the ones a room orders twice.
Islands
Coastal and clean, Singapore-grown — Kin Yan mushrooms, Edible Garden City herbs, day-caught fish.
Spice
The spice cabinet under the Western plate: curry leaf, laksa leaf, lemongrass, pandan. Warmth, not heat.
The circular bar, warm light, and the CBD at the glass.
The pours we would point to.
Aperitivo hour.
Each month a new pour steps forward. This month it’s the Aperol Spritz — prosecco, soda and an orange wheel, made for the golden hour before the city empties out.
Book a tableTwenty-two meals a day, given on trust.
CALI keeps twenty-two seats a day for the people a city tends to overlook — no forms, no proof, no questions. The plate in front of a guest has a twin at another table.
A seat at the bar is two taps away.
